"Waldorf Style" Chicken Salad (2025)

Waldorf Style Chicken Salad makes a great spring brunch or lunch dish! Quickly poach chicken breasts or use leftover chicken to create this salad with crisp apples, walnuts and dried cranberries. This is great on a bed of baby lettuces or even in a sandwich or wrap.

Chicken salad, made with apples, is one of my husband's favorite ways to eat chicken salad. He still loves his Favorite Ham Salad Spreadand he'll never pass up a good Egg Salad Sandwich, but he's always happy when this Waldorf Style Chicken Salad shows up for dinner or lunch!

This recipe for chicken salad calls for poached chicken breasts. They're super easy to make, but it can also be made using rotisserie chicken ( I love the rotisserie chicken from Costco! ) or any kind of leftover chicken you might have in the fridge. It's a fabulous combination of crunchy, sweet, and tart!

Nonfat Greek Yogurt and reduced fat mayonnaise, help keep the calories in check. The addition of cider vinegar helps the dressing to keep the apples from turning brown and gives the dressing a nice tang!

If you don't happen to have a poached chicken breast just laying around, you can very easily poach one or two for this recipe specifically (or any recipe that requires cooked chicken breast) . It's easy.

  • Take a bone-in ( skinless or skin on, doesn't matter) or a boneless chicken breast(s) in a med pan and cover with fat free, low sodium chicken broth ( you could also use water in a pinch ). Be sure to completely cover the meat with the liquid.
  • Allow the mixture to come to a boil, and then simmer on medium-low heat for approx. 15 - 20 min, or until chicken is cooked all the way through. (less time for boneless chicken breasts).
  • Remove chicken and allow to cool to room temp. When chicken in cool enough to handle, remove the skin and bone and discard then shred the meat into bite sized pieces using two forks.

Poaching chicken, as opposed to other methods of cooking, keeps the entire chicken breast moist and tender.

Can I use rotisserie chicken in Waldorf Style Chicken Salad?

Yes! You can absolutely use rotisserie chicken breast in this Waldorf Style Chicken Salad recipe!

How do you serve chicken salad?

I like to serve chicken salad on a bed of greens, such as spinach or spring mix. It's also great eaten in a sandwich served on multigrain bread, rolls, or even in wrap or pita! I have even made this chicken salad recipe and served it as a dip with crackers! It's a very versatile recipe.

No matter how you serve it, of all the chicken salad recipes out there, this one is my family's very favorite! We love all the different textures and flavors you get in each bite!

Waldorf Style Chicken Salad

Chicken breast meat combined with low fat mayo, crisp celery, sweet apple, crunchy walnuts and chewy dried cranberries for a lovely chicken salad great alone or on a sandwich.

Ingredients

  • 2 cups fully cooked chicken breast meat (or rotisserie chicken)
  • 1/4 cup mayonnaise
  • 1 tsp. apple cider vinegar
  • 1-2 TBSP plain Greek yogurt
  • salt and pepper, to taste
  • 1/4 tsp. dried tarragon (optional)
  • 1 cup chopped apple (any variety you like)
  • 1/2 cup chopped celery
  • 2 TBSP dried cranberries
  • 2 TBSP chopped walnuts

Instructions

  1. In a medium bowl, combine the mayo, vinegar, yogurt, and tarragon.
  2. Add in the chicken, apple, celery, cranberries, and walnuts.
  3. Add salt and pepper, to taste.
  4. Cover and allow flavors to blend in refrigerator for at least 30 minutes before serving.
