The stores have been full of wonderful, juicy peaches this year. In years past, we would buy a few and hope that they would ripen before going bad. We would get enough good ones to bake a simple gluten free Blueberry and Peach Coffee Cake, but that was about it.

But this year we have gone through multiple baskets, buying one every time we go to the grocery store, and every basket has been filled with perfect, juicy peaches.

I actually had enough ripe peaches at once to make this easy gf Peach Cobbler – something I wouldn’t have been able to do with the dry peaches we’ve bought in the past.

This time of year I’m always jealous of my friend Michelle from My Gluten-Free Kitchen because she lives in a climate that allows them to have peach trees in the backyard.

With her bounty she regularly bakes gluten free Peach Cake and Gluten Free Peach Oatmeal Cookie Crisp, plus has enough extra to freeze some for winter.

My yard came with ornamental apple trees. Yeah. Disappointing.

What is the difference between a crisp and a cobbler?

Although I have baked lots of gluten free Rhubarb Crisp, and even the occasional gluten free Apple Crisp, I have never actually baked a cobbler before.

While peach crisp generally has a crunchy oat topping, a Peach Cobbler usually has a biscuit like topping, although some have a cake-like topping.

The definition of cobbler seems to vary based on where someone lives, but generally, a homemade Peach Cobbler does not have a bottom crust. The peaches are placed on the bottom of the baking dish, and the biscuit-like dough is placed on top of the fruit before it is all baked.

Do I need to peel peaches for gluten free peach cobbler?

You do not need to peel the peaches to make this easy gluten free Peach Cobbler. If the texture of the peach skin doesn’t bother you, don’t bother removing it. There is nothing wrong with saving some time.

I did peel mine just because I love the bright color of the peaches, and knew my family would prefer them peeled.

How to blanch peaches for easy peeling:

If you prefer to remove the peach peel, it really isn’t hard to do if you blanch the peaches first.

Simply bring a pot of water to a boil, cut an “x” on the bottom of the peach, place it in the boiling water for one minute. Using a slotted spoon, remove the peaches and place them in ice cold water. After a minute in the ice bath, the peel should just slide right off.

How to make fresh gluten free peach cobbler:

Creating the perfect gluten free Peach Cobbler shouldn’t be difficult or time consuming.

  1. Place your cut up peaches in an appropriately sized baking dish. I prefer to cut the peaches into chunks instead of slices when making fresh gluten free Peach Cobbler because chunks stay nicely in the spoon. Stir in a little sugar, cornstarch, lemon juice, vanilla, cinnamon and salt. This will help create a nice sauce around the peaches.
  2. The biscuit topping comes together in a few seconds using a food processor. Whiz the dry ingredients together, then cut in the cold butter. Next, bring the dough together with a few pulses after adding the sour cream. It’s that easy.
  3. I decided to just sprinkle the gluten free peach cobbler topping over the filling, rather than form it into biscuits. I did this because it was much easier than forming the dough into biscuits, and this way I got a nice even topping over the whole cobbler. But if you want to form them into biscuits, you’re welcome to do so.
  4. I would suggest you not skip the step where you sprinkle the top with raw or course sugar. Since there is only a little bit of sugar in the peaches, and nearly none in the biscuit topping, the extra sweetness and crunch that the sugar gives is perfect.
  5. Bake until nice & bubbly. You will want to make sure that the filling is really bubbling hot, because then you know that the cornstarch will thicken the filling.

How to Serve and Store Gluten Free Peach Cobbler:

  1. Homemade gluten free Peach Cobbler is best served warm, but can be served at room temperature too. Perfect topped with a scoop of your favorite vanilla ice cream or a dollop of whipped cream.
  2. If you need to re-heat the Peach Cobbler, you can do so in a 250 F oven, or just microwave it for a few seconds.
  3. Fresh gluten free Peach Cobbler can be loosely covered with a clean dish towel and kept on the counter if it is going to be eaten in within the day. However, if you want to keep it longer, wait until it is completely cooled before covering with plastic wrap and refrigerating.

Ingredients

  • 6 large peaches, cut into chunks (about 6 cups)
  • 3 Tablespoons granulated sugar
  • 1 Tablespoon cornstarch
  • 1 Tablespoon lemon juice
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • pinch salt
  • 1 1/4 cups brown rice flour
  • 1/4 cup tapioca starch
  • 1 Tablespoon granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 Tablespoons cold unsalted butter, cut into cubes
  • 1/2 cup sour cream or plain yogurt
  • 2 Tablespoons raw or coarse sugar (for sprinkling)

Instructions

  1. Preheat oven to 350 degrees F, and grease a 8x11 inch baking dish (a 9x9 inch pan would work as well).
  2. To save yourself another bowl to wash, you can stir together the peaches, 3 Tablespoons sugar, cornstarch, lemon juice, vanilla, cinnamon, and a pinch of salt right in the baking dish. Spread the fruit in an even layer.
  3. In a food process, or mixing bowl, combine the brown rice flour, tapioca starch, 1 Tablespoon sugar, baking powder, xanthan gum, baking soda and salt. Pulse or stir to blend the ingredients.
  4. Cut in the cold cubes of butter. If using a food processor, a few pulses should work. Otherwise, you can use a pastry cutter or two knives to cut the butter into small, pea-sized pieces.
  5. Add the sour cream and pulse or stir until the dough comes together, and has an even texture.
  6. Distribute the topping evenly over the peaches in the baking dish.
  7. Sprinkle the topping with the 2 Tablespoons of raw or coarse sugar.
  8. Place in preheated oven and bake for 30-40 minutes, or until the peach filling is bubbling, and the topping is browned.
  9. Let sit for a few minutes before serving with a scoop of vanilla ice cream or whipped cream.

Notes

Fresh gluten free Peach Cobbler can be loosely covered with a clean dish towel and kept on the counter if it is going to be eaten in within the day. If you want to keep it longer, wait until it is completely cooled before covering with plastic wrap and refrigerating.
