Ingredients for the Filling

  • 6-8 peaches, peeled, pitted, and sliced
  • 200 grams caster sugar
  • ½ teaspoon ground cinnamon
  • 1-2 teaspoons lemon juice
  • 1 tablespoon cornstarch

  • 125 grams plain flour
  • 200 grams caster sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 240 millilitres milk, at room temperature
  • 110 grams unsalted butter, melted
  • butter for greasing the casserole

Methods

1. Preheat the Oven

Preheat the oven to 190°C (375°F) and lightly grease a casserole.

2. Prepare the Filling

Start by peeling, pitting, and slicing the peaches. I used vineyard peaches, but any other variety of peaches will work.

Place the sliced peaches in a mixing bowl. Add 200 grams of caster sugar, ½ teaspoon of ground cinnamon, 1-2 teaspoons of lemon juice, and 1 tablespoon of cornstarch.

Stir gently and let sit for 10-15 minutes to allow the flavours to meld and the peaches to release some of their juice.

3. Prepare the Batter

In a separate mixing bowl, combine 125 grams of plain flour, 200 grams of caster sugar, 2 teaspoons of baking powder, and ¼ teaspoon of salt. Mix well.

Pour 240 millilitres of milk and 110 grams of melted butter into the dry ingredients and stir briefly. It’s okay if small lumps remain. Avoid over-mixing to prevent a dense texture.

4. Assemble the Cobbler

Pour the batter into the prepared casserole, spreading it evenly. Spoon the peach mixture evenly over the batter, including the juice. Do not stir! The batter will rise around the peaches as it bakes, creating a delicious crust.

5. Bake

Transfer the casserole to the preheated oven and bake for 40-45 minutes, or until the top is golden brown and the dough has risen around the peaches.

Once baked, allow the Peach Cobbler to cool slightly before serving.

6. Serve

Peach Cobbler is best served warm, either on its own or with a scoop of vanilla ice cream. The contrast between the warm cobbler and the cold ice cream is a delicious treat. Drizzle some caramel sauce on top for extra indulgence.

Berry-Peach Cobbler: Add a handful of mixed berries (like blueberries, blackberries, or raspberries) to the peach mixture for a fruity twist.
